El Salvador San Carlos
Cooperativa San Carlos has been running as a co-op of 126 member farmers each with their own lot since 1980. They work together on a farm located on the Cacahuatique Mountain, spread over 672 Ha, at 1100-1665 masl. This coffee is from Lot 5, and is a select Bourbon variety. After the cherries were harvested, the coffee was pulped (the skin removed, and the mucilage left on the beans). The beans were then placed in barrels for 90 hrs, then moved to a patio to be control dried for 16 days. The time in the barrels allows the beans to go through a ‘pre-fermentation’ before drying to the desired moisture level ready for milling and shipping.
