Hugo Hernan Lopez is one of the original founders of the Aruco Cooperative. He has been working in coffee for 36 years on his farm EL Naranjo. He believes in protecting the environment and has never used herbicides or fertilisers on his farm. He uses a type of chilli water to apply to the soil to help prevent the spread of insects and worms. Aruco Cooperative not only owns the farm, they also own a wet and dry mill. This means they can control the quality from harvest all the way through to shipping the coffee to our roastery. This coffee was sorted removing any unripe beans. The skins and mucilage are then removed and the coffee beans are soaked in water to further remove all the mucilage. Finally, they are washed with running water and then dried for several days.
